There is little doubt that carp do enjoy eating sweet tasting baits. However they can also become a little wary of very sweet baits too - depending upon how much they have been used and how often they get caught on them.
In terms of initial attraction I don't think the sweetness particularly comes into the equation - it is more of a taste than an attractor.
If you are using typical synthetic sweeteners as supplied by many bait companies then 20% sweetener to 80% flavour should be more than enough.
Where possible I like to use natural products - there are many different types of sugar available in all supermarkets and because they are no-where near as concentrated as the artificials it is more difficult to get things wrong and a more consistent bait can be achieved. When you are working in tiny 1ml amounts it is difficult to keep things totally consistent - try 'proper sugar' you can measure that out by the spoon full and the carp certainly like that.

Dear Shaun,
I am making my own boilies and paste using the Yellow Birdy Base Mix. Last week I forgot to add my sweetener to the boilie mix and I added it only to the paste. I was surprized to see that I cought carps with 10 mm coated boilies with paste as well as with uncoated boilies.
How important is the sweetener in the boilies mix? What sweetener would you recomand and its concentration (how sweet the boilies and paste should be?) in cold wather, lower than 10 degrees?
The ingredients I used were: Yellow Birdy Base Mix 75%, a mix of 85-plus per cent milk protein 20%, cream and baby cereals 5% (they include Lactose about 30%), one drop per egg of a mix of essential oils, one ml per egg of a mix of diferent flavors.
Regards,
